Here's a tasty alternative to the normal chicken and rice dish that pairs lean, boneless chicken breasts with long grain wild rice and Swiss cheese for a dish that will is healthy and hearty.

To make things easier, you'll be using frozen chicken breasts. You'll need: 1/2 cup of green bell pepper, 1/2 cup of red bell pepper, 1 cup of sliced mushrooms, 3/4 cups of water, two boxes of long grain wild rice and 4 slices of Swiss cheese.

With clean hands, wash the ice from four frozen chicken breasts while holding them under cold running water for one to two minutes.

Get out a large skillet and spray liberally with nonstick cooking spray. Add the chicken to the pan and cook for five to seven minutes over medium high heat; or cook until chicken is a light brown color.

Next, add in three and three fourth cups of water, two boxes of long grain wild rice with seasoning packets. Bring rice to a boil and then cover and reduce heat. Simmer rice for twenty minutes.

Stir in one half cup of chopped green and one half cup of chopped red bell peppers. Sprinkle one cup of sliced mushrooms over the chicken. Keep covered and cook for another five to eight minutes, or until the chicken juices run clear.

Carefully place a slice of Swiss cheese over each chicken breast.

Remove from heat and let stand, with the cover on, for five minutes, or until the cheese melts. Serve chicken with dinner rolls and vegetables.
